Cured the Crave for Cupcakes

The foodies' malady starts with a desire that works effortlessly to a craving. I had to conjure a cure for a sudden craving for cupcakes.  To do that I've to convince everyone of my unfailing culinary skills and mark the event on the calendar. So over the weekend Japhia and I, by alchemy transmutated our concoction into golden favorites for gastronomy.



Japhia and I could not decide on one flavour so we made two - orange cupcakes and chocolate cupcakes.


We extracted recipes off the net.

Butterfly Orange Cupcake by Amy Beh:

Ingredients
- 250g butter
- 175g castor sugar
- 1/2 tsp vanilla essence
- 1/2 tsp orange essence
- 4 eggs
- 1 tsp grated orange rind
- 225g self-raising flour, sifted
- 1 tbsp UHT milk
- 1 tbsp orange juice
- 2 tbsp chopped glazed cherries, tossed with 1 tbsp plain flour
- 200g whipped cream
- strawberries, sliced

Method
1. Preheat oven to 190*C. Cream butter and sugar until light. Add both essences and beat until creamy. Add eggs one at a time, beating well after each addition.
2. If mixture begins to curdle, beat in a tablespoon of self-raising flour before adding remaining eggs. Add in grated orange rind and mix.
3. Fold in flour, half at a time, alternating it with the milk and orange juice and mix well on lowest speed. Stir in chopped cherries.
4. Spoon mixture into paper cups and bake in preheated oven for 20-25 minutes or until cakes are done.
5. Leave cupcakes to cool, then slice off the top quarter of each cake. Cut each of these pieces into half (to make the butterfly wings).

For decoration: Pipe some whipped cream on top of each cake, then stick on two cake pieces to resemble the wings of a butterfly. Decorate with some strawberry slices or chocolate chips.

Chocolate cupcake recipe:

Ingredients
For the cupcakes
- 25g/1oz self-raising flour
- 25g/1oz cocoa powder
- 50g/2oz caster sugar
- 50g/2oz margarine
- 1 egg, beaten
For the chocolate icing
- 100g/4oz icing sugar
- 2 teasp cocoa powder
- approx 1 tbsp water

Method
1. Heat the oven to 190*C, 375*F, gas mark 5 and place 10 paper fairy cake cases evenly on the baking tray.
2. Place all the cupcake ingredients in a large mixing bowl and beat with a wooden spoon until well blended. The mixture should be soft enough to drop easily from the spoon when tapped.
3. Place a heaped teaspoon of cupcake mixture in each paper case and bake towards the top of the oven for 12-15 minutes, until the cupcakes are well-risen and firm to the touch.
4. Remove the cupcakes from the oven and cool on a wire rack.
5. Once cold, sift the icing sugar and cocoa powder into a mixing bowl, add water and mix until smooth. The mixture should be thick enough to coat the back of a spoon but not too runny.
6. Place a teaspoon of the chocolate icing on the top of each chocolate cupcake and smooth with the back of the spoon. Put aside to set for at least 20 minutes before serving.

Japhia and I got started on orange cupcakes first.

Since Japhia wanted fairy/baby cupcakes and I thought it'd be nice to have big ones, we made both.

Soon Japhia had to leave so I was shorthanded for a while until Sue Li came and helped with the chocolate cupcakes.

I used whipped cream

Misadventure Revisited

Like every other Sunday, I go to a secluded corner of the church to study during second service after attending the first.

It was past 12.30 pm; the usual time when the second service ends yet everything seemed quieter than usual..

I awoke from academic immersion with this thought, "What if I get locked in?"

Immediately, I recalled one of the funniest memories I had with Andrea as kids.

AEONS AGO, before mobile phones were ubiquitous, my cousin Andrea and I got locked up in the church office.

Here's how our inconceivable conversation went according to the dynamics of my random access memory:
Andrea: How?
Janna: We can use the office phone to call my dad.
Andrea: Okay.
*Janna makes phone call*
Andrea: So how?
Janna: It says toooooot, the number you have dialled is unavailable, please leave a message after the tone, TOOOOOT.
Andrea: Oh, try to call again then.
*Janna calls again*
Janna: It keeps saying TOOOOOT, the number you have dialled is unavailable, please leave a message after the tone, TOOOOOT!
Andrea: So what do we do?
Janna: I guess we'll just leave a message.

So we did. 

Then we folded it and slipped it under the door.

Moments later,
Andrea: Do you think your dad got the message yet?
Janna: I don't know. But if he does, he'll open up for us.



Andrea darl, I miss you and getting into trouble together. =)

GYLS 2009 Ambassadors and Alumni Reunion

Two weeks ago during the holidays, I went on a trip to Penang to meet up with the Malaysian ambassadors and alumni of GYLS 2009.

How we Ipohians got there?
By bus.

Who drove us around in Penang?
Melvin and Richard.

The contingent plan was to have a barbeque on the beach until midnight.

Problem was - it rained almost ALL DAY so we banked on our best alternative; Jen's house.

The guys started working on the fire...


while Bryan worked on the food.


When both food and fire were ready, we all started grilling what we hungered after.

The food was gooooood.

The fellowship was great.

Melvin the literally happy head hunter; Bryan the willing prey and Jia Xiong lined up for the predator.

My favourite of all time: THE MARSHMALLOWS.

Speaking of marshmallows, I spent two nights at Uncle Terry and Auntie Jen's place in Singapore after my return from the US and we had a barbeque on one of the nights.

Had we the graham crackers we would have made s'more but my cousins and I made something equally good and less sinful with a packet of marshmallows AND milk chocolate.

The brilliant idea was to cut the chocolate into little chunks and stuff them into the marshmallows.


So that's what we did.

My dear cousins, Sarah and Deborah stuffing them marshmallows.

I did the same.

Okay, you're probably asking why the heck did we put the marshmallows through both ends of the stick.

Because the second brilliant plan was...

to sacrifice a cob of corn which made life easier for us.

It was AMBROSIAL.

OKAY BACK TO THE PENANG TRIP.

Instead of barbequeing until 12 midnight as planned, we cleaned and packed up at about 9pm.

Then we 'bonded' almost all night in Jen's den.

We talked and we laughed; we crapped and we laughed even more.

We even played with Jen's soft toys.

That's the tail of some creature and those two white...err...nevermind.

The trip ended with shopping and a LOOOONNNGGG bus ride home for the Ipohians.

Off to study.
Yes, this is the best possible position to memorize 46 values and definitions for Moral.

Adversity

*I'm recycling my pictures because I don't have time for new ones*

Day before SPM trials:

I study.

I get frustrated when my brain keeps repelling everything I try to put in.

So I play the piano.

I get frustrated when I don't get all the notes right.

So I get on the Internet and even watch TV.

I get frustrated at the thought of wasting time on the Internet and TV instead of studying.

It's important to have enough sleep right?
So I get into bed by 9.45 pm.

I get frustrated by 10.45pm because I'M STILL NOT ASLEEP.

*asleep*

I get frustrated because I wake up at 3.00 am.

...too tired to be alive.

Off to suffer the mystery encrypted in my body that works against my mind.
Travaux forcés à perpetuité (forced labor for life) will pale in comparison to this misery.
